RECIPE – Basil Pesto

Basil’s attraction is near phenomenal to me. Rub a basil leaf or two in your hands and the oils fill the air. It stops me for a second, each time I am amazed at the wonderful power of plants.
Transformed into a sauce for pasta, it is a true elixir*.
* Elixir : a magical or medicinal potion

INGREDIENTS
2 cups fresh basil leaves 2 garlic cloves 1/2 cup pine nuts or sunflower seeds1/4 extra virgin olive oilA pinch of sea salt

METHOD
You can toss everything into a food processor and blitz it a few times until you have an well blended sauce.

Or if you do not have a food processor, you can just mince the garlic, basil and seeds as small as possible with you big knife and add the oil and the dash of salt. It will be coarser and chunkier but I really like it that way.
Add a good few dollops to warm pasta. Mix to coat the pasta and enjoy!
