RECIPE – Raw Beetroot Salad

Such colour & taste! plus the added sour apple just makes it!
This recipe is my mother’s. We always ate beetroot salad at home and perhaps to make it sweeter and easier to eat, she cut some apple into it. Normally, I prefer not to have fruit in my savoury salads, but the sour apple, granny smith in this case, gives it a wonderful sweet / sour taste.

Now I just love it.
When the beetroot comes from my garden, organic and minutes fresh, you just can’t beat it. On instagram, @hungrysoulplantpower, I said I would share the recipe for the colourful pic, so here it is … to be made in minutes.

Serves 4 to 6 as a side salad
INGREDIENTS
3 or 4 medium beetroots 1 Granny Smith apple2 tbsp extra virgin olive oil2 tbsp. apple cider vinegarPinch of sea salt
METHOD

  1. Peel the beetroot and grade it, with the large holes of the grater.
  2. Peel the granny smith apple and cut thin cubes… or as you like and add to beetroot.
  3. Add the olive oil, the vinegar and a pich of salt and mix everything together.
  4. Allow to sit 15 minutes in the fridge before serving.
