Can you believe that by adding one big dish to your diet everyday you could find a difference to you energy level? Well, I did it and it has for me.
…and the best way to know if it works is to try it yourself.
So I did…
I started eating this dish after listening to an interview by Dr. Fuhrman. What he said was, and I paraphrase, “eating a combination of certain fresh foods is the way to a healthy life, it is that simple … and it is the best way to fight diseases or viruses”.
So, I started to make this daily, what I did not realize was how full and satisfied I was after eating it and not tired as I often was after a big meal. I felt very good a little time later and now if I do not have this at least once a day, I really miss it.
Who is this Dr. Fuhrman?

Notice that there are no berries in the drawing? Well generally I do not like fruit in my salad, but I have grown to like it… drawing done pre-berries inclusion period.
My interpretation
( most things in life require personal interpretation 🙂
Greens – spinach, lettuce, kale or cabbage Beans – kidney beans, chickpeas or any other beans and lentils Onions – sweet red, yellow or white onion, green onion, even garlic Mushrooms – traditional button mushrooms, cooked lightly Berries – fresh blueberries or dried ones, other berries, grapes or raisins Seeds – sunflower, pumpkin, hemp or sesame seeds, why not a few chopped nuts
To dress this salad the the key is to make it oil-free. According to Dr. Fuhrman and other doctors at the forefront of modern nutrition ( see www.pcrm.org ), oil is refined food that we should avoid as much as possible. But how to make oil-free salad dressing? just scroll down.
Make it a big salad.
Perhaps double what you think you will eat, then sit down and eat it slowly, chewing well. Take your time. We are so used to eating quickly, so after eating half it we want to stop, don’t. Just rest a few minutes then resume. Your jaw may not have had such good exercise in a long time … after a few days it will come easier to you and you will look forward to your special meal.
After this you will be less hungry later.
RECIPE
Oil Free Salad Dressing
Made with ‘oily’ whole foods like nut butters, avocados or cultured cashew vegan cheese from Hungry Soul ( pardon the plug!).
INGREDIENTS
1/4 cup of tahini ( sesame paste )Juice of one lemonOne or two garlic cloves depending on your preference for garlic.2 tbsp of apple cider or balsamic vinegar1 rounded tsp of wholegrain mustard1/4 cup of water ( maybe a little more depending how runny you want it )A pinch of salt
METHOD
– Put it all together in a blender.- Give it a good smooth blend then taste it to see if it needs more salt or water ot even lemon juice- That is all it takes
N.B. if you like a little sweetener, a tsp of maple syrup will do it.

… but give it time
You body knows what is good for it. Yet, if we have been feeding it incorrect food, good food will seem strange and may take time for the stomach to become accustomed to it … if it is the right food, it will soon thank you.
