The people meeting at COP 21 in Glasgow this week say they are very concerned about the rising temperatures of the planet. They have started the catch phrase, “ Keep it below 1.5 ̊C ”.
But can we do anything?
There is something you can do that will make a big difference! Do you know that what you eat has a huge impact on the planet?
If tomorrow everyone in the world went vegan, only ate plants; – climate change would be reduced – rain-forest deforestation would be reduced and, – antibiotic resistance would be reduced – heart disease, obesity, type 2 diabetes and most cancers would be reduced …
… is it worth to try and do something about it?

Chickpeas … a solution?

Chickpeas are a very important food. They are a very important source of protein and carbohydrates and eaten in most parts of the world. As a legumes they returns nitrogen to the earth, helping improves the soil for the following year’s crop and chickpeas also require much less water than many other crops.
And the best part about chickpeas… it is the main ingredient for hummus !

I first ate this stew in Belgium, it was the only vegan option on the menu, but I was so pleased when it came out. Now I make it from time to time when I want a savoury chickpea dish with a little of that warm spice of Northern Africa.

Moroccan Chickpea Stew
So good, very filling … and all vegan!
So easy to make.
I served it with a small mound of millet. I should do it more often. The millet is quite different from rice and I find it very satisfying…I drop a tsp of cumin seeds and a few whole cloves of garlic in the water … yes, it was quite nice.
Moroccan Chickpea StewIngredients- 1 medium onion, finely chopped- 1 carrot, chopped- 1 sweet potato, coarsely chopped- 1 tin of chickpeas, 400g – drained- 1 tin of chopped tomatoes, 400g- 2 tbsp tomato paste- 2 tbsp of raisins- 1 tsp ground cumin- ½ to 1 tsp chilli powder- ½ tsp smoked paprika- ½ tsp cinnamon- 2 tbsp good olive oil- a tbsp or two of lemon juice – 4 tbsp fresh coriander, finely chopped- 500 ml of water- ½ tsp of sea salt ( more to taste )
Method1. Soften the onion in the drop of oil.2. Add the carrots and cook another few minutes, stirring so it does not burn.3. Sprinkle the spices over the carrot and onion.4. After a minute add the sweet potato, the chopped tomatoes, the tomato paste, the raisins, the chickpeas and the water.5. Bring to the boil, then simmer until the sweet potato is cooked.6. Just before serving add the coriander and the lemon juice.
For the
MilletIngredients:1 cup of millet2 1/2 cups of water3 cloves of garlic peeled and left whole1 tsp cumin seeds
Method:Put everything into a pot and bring to the boil then simmer for approx.. 20 minutes.Check to see if it is cooked
